Sapore abbastanza fresco, sufficientemente caldo, morbido e gradevolmente tannico. Retrogusto in armonia con le sensazioni olfattive di sottobosco. Ideale negli abbinamenti con aperitivi, primi e secondi di carne, specie se particolarmente aromatici e ricchi di aromi. Nelle cucine creative viene talvolta abbinato ad alcuni piatti
